  1. 2 carrots, peeled, cut into skinny chips
  2. 1 eggplant, cut into chips
  3. 2 zucchini, reduce into chips
  4. 1 small crimson capsicum, deseeded, thickly sliced
  5. Extra-mild olive oil cooking spray
  6. 1 tablespoon finely grated parmesan
  7. four x 100g skinless, boneless salmon fillets
  8. 1 tablespoon finely grated parmesan
  9. 1 cup sparkling basil leaves

  1. Preheat oven to 220C/200C fan compelled. Line a huge baking tray with baking paper.
