  4. 1 bunch choy sum, trimmed, reduce into thirds

  1. Bring the inventory and water to the boil in a large saucepan. Cook the noodles for two-three minutes or until soft.
  2. Stir in the choy sum and simmer for 2 minutes or till wilted.
  3. Reserve one-area of the shallot. Add remaining shallot to pan. Cook for 1 minute. Ladle amongst serving bowls. Top with the reserved shallot.
