  1. 12 lamb cutlets, French trimmed
  2. 85g (half of cup) dried apricots, finely chopped
  3. 2 spring onions, trimmed, finely chopped
  4. 2 tablespoons boiling water
  5. 250g salted pistachio kernels
  6. 25g (1/4 cup) dried multigrain breadcrumbs
  7. 1 egg
  8. 1 tablespoon water
  9. Olive oil, to grease
  10. 2 bunches English spinach, trimmed
  11. 40g butter
  12. 1 tablespoon olive oil
  13. 3cm-piece sparkling ginger, peeled, shredded
  14. 2 garlic cloves, thinly sliced
  15. 1 child fennel bulb, thinly sliced

  1. Cut a slit inside the facet of each lamb cutlet to make a pocket. Combine the apricot, spring onion and water in a bowl. Season with salt and pepper. Set aside to melt barely.
