  1. 400g penne rigate
  2. 1 tablespoon olive oil
  3. four short-reduce rindless bacon rashers, thinly sliced
  4. 1 garlic clove, finely chopped
  5. 1 treviso, leaves separated, coarsely shredded
  6. five solar-dried tomatoes, thinly sliced
  7. three teaspoons finely grated lemon rind
  8. 60ml (1/4 cup) sparkling lemon juice
  9. Shaved parmesan, to serve

  1. Cook pasta in a massive saucepan of salted boiling water till al dente. Drain.
