  2. 2 eggs
  3. 300g carrot, peeled, grated
  4. 1 pink capsicum, deseeded, diced
  5. four long inexperienced shallots, thinly sliced
  6. 1/four cup chopped fresh coriander, plus 1 tablespoon greater
  7. 1 teaspoon finely grated lime zest
  8. 1 teaspoon ground cumin
  9. 80g (1/2 cup) wholemeal self-raising flour

  11. 200g medley tomatoes, quartered
  12. 1 tablespoon lime juice
  13. half of teaspoon smoked paprika
  14. Baby spinach leaves, to serve

  1. Place beans in a large bowl and mash, maintaining some texture. Add eggs and stir till nicely mixed. Stir thru carrot, capsicum, shallot, coriander, lime zest, cumin and flour. Season.
