  7. 30g-60g (1/4-half cup) Keens Curry Powder
  8. 10 clean curry leaves
  9. 500g chicken thigh fillets, reduce into 2cm portions
  10. 1 x 400g can diced tomatoes
  11. 400ml water
  12. 2 massive potatoes, peeled, cut into 2cm portions
  13. Light sour cream, to serve
  14. Steamed white rice, to serve
  15. 1 bunch clean coriander, sprigs picked

The instruction how to make Mauritian hen curry

  1. Heat oil in a heavy-primarily based frying pan over medium warmth. Cook the onion, garlic, ginger and cumin seeds, stirring regularly, for 4 mins or till smooth and aromatic. Add the coriander stem and cook dinner for 1 minute. Add curry powder and curry leaves. Cook, stirring, for 1 minute or until aromatic.
